
I decided the best way to celebrate the day is to share my pumpkin love with others. I made a beautiful Pumpkin Pound Cake with Buttermilk Glaze last night that is currently sitting on my desk just waiting to be enjoyed by friends. I also have salted pumpkin seeds & green tea pumpkin seeds (see photo below), courtesy of my dope boss, to share. Just to warn you, I will probably take your picture with the pumpkin goodness so you may end up on this lovely blog. You are going to FAMOUS! Hello - I have 14 followers.
Last night Kristina and I made Pumpkin Chicken Enchiladas and O.M.G. they were good. The pumpkin puree was mixed with jalapeno, some green chiles, garlic and stock to make the enchilada sauce. We used a mixture of chicken, green chiles, black beans, corn & cilantro as the stuffing and layer it with corn tortillas. We already had little mini corn tortillas for tacos, so we decided to do the layered casserole method instead of rolled enchiladas. Regardless, they were delicious and you should probably make them. Do it.
