I know I posted yesterday, but I thought people may want to know what pumpkin dishes I consumed. Well, friends, let me tell you about my pumpkin filled day.
- Breakfast: Pumpkin Bread
- Lunch: Pumpkin & Black Bean Soup with a harvest salad on the side
- Dinner: Pumpkin Hummus, Caramelized Onion and Fontina Cheese Pizza
If you are nervous about the pizza, don’t be because it was delicious. Since I do not own a food processor (yet), I was unable to truly make my own hummus. I improvised with a container of plain hummus from Whole Foods and added my own pumpkin puree. I know, brilliant! For the flatbread I used the Whole Foods store brand Naan for no reason other than I love it. I am not going to lie to you, I was a little apprehensive about the pizza so I made a second non-pumpkin option. I was inspired by a pizza that my friend Cameron purchased at the local farmer’s market so I made my own verion. I brushed olive oil & balsamic vinegar on a piece of naan and then topped one half with gorgonzola cheese & pear slices (wham, bam, thank you, cam!) and the other half with mozzarella, tomato & basil (thank you, Kitzmmer garden.) All three options were culinary delights. But wait! There’s more! Kristina and I topped it all off with a bottle of the Great Pumpkin Ale from the Elysian. Because I am a lady, I am not going to tell you how much I love this stuff but trust me – it is good.
Day 7
Today I am tackling my leftovers. It is lame, but it has to happen. I had a slice of … you guessed it … pumpkin bread for breakfast and I am about to enjoy another bowlful of ... wait for it ... pumpkin & black bean soup. Tonight I shall dine on a non-pumpkin treat because I fear I may be entering fiber overload. Just trust me on this, friends.
