Seriously, though – where in the world is my case of pumpkin? The shipment information said it would be delivered by October 1st. “YOU LIE!” That is right, y’all, I am going to get all Joe Wilson on Amazon if they don’t deliver my pumpkin soon.

I have been quite busy with my pumpkin creations over the last few days… some have been a little better than others.
Day 14 – Pumpkin Stew. I just winged it… apparently I think I am a pumpkin expert. I threw together sautéed onions & garlic, vegetable stock, pumpkin puree, diced potatoes, diced carrots, diced tomatoes, garbanzo beans and spices into a large sauce pan and BAM we had stew.
Day 15 – Pumpkin Bread. I walked from my office to the Starbucks across the street to make this happen. And you know what? The pumpkin bread I made on Day 5 was better. Suck on that, Starbucks.
Day 16 – Pumpkin Fudge. You heard me right – pumpkin fudge. There was no cocoa/chocolate in this recipe… really it was a bit like pumpkin soft candy or the filling for a little pumpkin tart. The possibilities are endless. Unless you are diabetic – in which case, stay far away from this stuff. Kristina and I took this with us to a small wine and chocolate tasting at Heather’s house. I think the fudge pairs well with wine. All wine. Pick a wine, any wine. (Yeah, I don’t have a discriminating palette.)
Day 17 – Pumpkin Pancakes! They deserve the exclamation point. First, I must say that I was disappointed that the recipe did not include alcohol. If you have ever watched Semi-Homemade with Sara Lee, you know that woman likes her booze. Now on to business – these pancakes are delicious! I think they will become part of my Denver Bronco watching rituals. (Hello, we are miraculously 4-0. Thank you, pumpkin pancakes.)
Day 18 – I am currently enjoying leftover pumpkin stew. I was hoping to make some pumpkin curry this evening, but I may be too busy watching Monday Night Football with some friends at a local pub. Good thing I have the stew because I have a feeling that Saint Andrews Pub does not carry pumpkin puree.
Hello, Pumpkin Pancakes!
